Da Nasti, where making pizza becomes an art
40 years of history from Amalfi coast to Bergamo
At Da Nasti you will find a Guinness World Records menu with more than 250 different kinds of pizza. It is one of the best known pizzerias of Bergamo and it is the symbol of a tradition that started more than 40 years ago, during the 60’s, when Assunta and Giovanni moved from their homeland to Busto Arsizio; here they came up with the original idea of making pizza. In 1968 they moved to Bergamo, in S.Bernardino street and in 1974 their sons Carmine, Gino and Vittorio opened the pizzeria Capri da Nasti led by their parents.
The gastronomic proposal and doughs by Da Nasti
The chef of Da Nasti prepares the pizza dough with great care, using only italian stone-ground flours and making it with the so called biga, a pre-fermented dough made with 100% italian stone-ground flour, water and a mix of natural leaven and sourdough starter. Then the chef leaves the pizza dough to stand for 14 to 48 hours; finally he adds salt and extra virgin olive oil, so that the pizza base will be light and easy to digest.
«Tramonti (the owners’ homeland) was placed in a rural area – says Nasti- so pizza was made with simple ingredients that we had at home: whole wheat flour, fennel, pecorino cheese, seasonal vegetables, anchovies or sometimes mozzarella made with cow’s milk. Pizza was a sort of big, crunchy bread cooked using the peel and at a very lower temperature than Neapolitan pizza; we ate it all together only on the most special occasions».
Here you will not find the classic Neapolitan pizza, but you will discover and enjoy the special taste of the pizza of Tramonti, that has already won over all the inhabitants of Bergamo city.
