At Morlacchi restaurant with the chef Stefano Ghisleni
“Welcome to our restaurant, the true expression of what we are”
The castle of Bottanuco has been the setting of our restaurant, which was called “Morlacchi” to draw attention to the historic value of this building, for some years. The castle first belonged to Bartolomeo Colleoni, a famous leader from Bergamo, and then became the summer house of the Morlacchi family.
“We chose this name because we liked the idea of recalling the history of this ancient building and we wanted to give value to its glorious past”. – says Elena Corbetta, one of the two most important people of this restaurant and a very likeable person, always ready to greet her guests with a warm welcome. The other restaurant owner is Stefano Ghisleni, a chef with a very strong and authentic personality, which he puts also into the food he makes, and with a great passion for beauty and its essence.

Our chef Stefano Ghisleni, from Bergamo, has had a natural talent for making beautiful and tasty creations since when he was a child; in fact, when someone asked him what he would like to do in his life, he always answered that he wanted to be a gourmet or a food taster. So, he ended up working in many different cuisines while attending the cooking school; eventhough, he confesses: “In my opinion, the real tip to learn how to cook is to work in many different places and to travel to uknown Countries”.
Born in 1985, after working for some years in the U.K. and in Italy, he came back to Bergamo, where with his wife, who in the meantime had acquired much experience as a Maître, he made their dream of opening a restaurant come true.
“The cooking we offer in our restaurant fully represents what we are and what our aim is. During the past few years we did a long renovation work, taking care of all the details, and the result was a building as beautiful as we had imagined it” say Stefano and Elena.
The chef is an open, sincere, genuine and meticulous person and his cooking reflects his personality. This is art, too.
To be a good chef, you have to train your sensitivity and to improve your perceptions. If you are familiar with the ingredients you are working with, you will become more and more expert and capable of getting interesting results.
“When I cook I work raw materials with great care, but I also add my fantasy and creativity to the dishes I prepare” says the chef. All the main ingredients are bought by local producers, including bread, breadsticks and pastry products.
The menu consists of meat dishes, first courses and especially seafood dishes.
The dining room seats up to 40 guests (also 90 for banquets), so the chef stefano Ghisleni can personally get and select the raw materials and take care of the dishes preparation, made by creating the right balance between taste and estethic appeal.
The elaborated and refined raw materials combined with high quality cuisine tecniques will make you live an unforgettable tasting experience.

For dinner you can choose either the menu a la cart or the tasting menu for 35 euros per person, beverages included, Wednesday to Sunday. For the lunch break we offer different menu combinations, with a price range around 15-25 euros.
The restaurant is closed on Monday and Tuesday; it is placed in Bottanuco, in the province of Bergamo (Highway A4, exit Capriate San Gervasio). You can also get the takeaway menu by phoning.
