In piazza Vecchia you’ll find excellent quality typical local food
The restaurant is placed in the hearth of the Uppertown of Bergamo, in Piazza Vecchia, and it has been managed by Stefano and Samuel, the chef, for nearly 25 years.
It was named after its historical owner, Franco Sant’Ambrogio, who taught them a lot about how to manage a restaurant and especially about wine business. He was a co founder of AIS (Italian Association of Sommeliers) and he passed down to Stefano - one of the current owners and the Maitre, who personally takes care of the wines selection - his passion.
“At the beginning of the 90’s - says Stefano - it was unusual to find local products in restaurants and the concept of “regional food” was not considered so important. So we did decide to create not a simple tavern, but a well-made one”.
The key of Stefano and Samuel’s job is the care for raw materials research and selection, but most of all a constant practice of different cooking methods and the respect for the food they work with and cook.
Sant’Ambroeus restaurant and its food
Among the many different dishes on the menu both the tourists who want to taste the local food and the gourmet, who let themselves get carried away by the chef gastronomic proposals, will surely find the most suitable ones to their needs.
There are not only seafood dishes, but also the typical local food like homemade “Casoncelli”, the ravioli seasoned with bacon, melted butter and parmesan cheese, all made with great creativity. They are innovative, modern and really refined. Others crown jewels on the restaurant menu are the “Risotto Milanese” - with saffron and bone marrow and the “Foiade”, a fresh pasta with Porcini mushrooms, Branzi cheese and blacktruffle, two dishes typical of the local culinary tradition. Among the main courses, you can always find the classic roasted rabbit, made with red wine and bacon and served with polenta, the Veal Milanese, made with clarified butter, or the baked boneless quail. Then there is a wide selection of seafood dishes made with great care by the chef.
The main starters by “Trattoria Sant’Ambroeus” are the seafood based ones and some specialties of Bergamo, such as the “misultit” (dried anchovies from Como lake) served with crunchy polenta, porcini mushrooms cooked with garlic, parsley and oil, grilled Béese de Brans and much more.
The refined wine list was created by the sommelier and Maitre Stefano and they also have a wide selection of spirits, composed by Whiskey, Cognac, Vermuth and many others from all over the world.
